Every day, fishing ports land an extraordinary variety of fish. Yet most of us see only a handful of familiar species.

The rest are pushed aside—not because they aren’t good, but because they don’t fit the market. Perfectly edible fish are discarded. Others are labeled “problem fish” simply because there are too many of them.

Take Kurodai, for example. Once prized in western Japan, changing diets and ocean conditions have left this delicious fish overlooked and undervalued. Many species with real potential never reach our plates.

This imbalance is not about scarcity. It’s about how we choose.
