A project designed to bring Umios’s purpose, “For the ocean, for life,” into action.

In collaboration with the University of Tokyo, the Planetary Health Innovation Center, East Japan Railway Company (JR East), fisheries, fishers, and partners across Japan,
we work toward realizing planetary health for the benefit of both people and the planet.

Made with black sea bream from Okayama Prefecture, once prized as a premium fish but now less commonly distributed, each rillette is crafted as an aperitif to be enjoyed with ease.
